A delicious soft and chewy granola bar! Super simple and easy to whip up in less than an hour and ready for a quick an easy breakfast treat for the rest of the week. I made the recipe with a view to being able to have an easy, tasty, mess free breakfast on the way out the door, and it definitely ticks all those boxes.

This simple granola bar recipe will leave you astounded that you hadn't made it sooner. I love that it's so versatile and can be easily swapped around for what you have in stock in the pantry on any given day. Add dried fruits like raisins, unsweetened coconut, or apricots. Swap the dark chocolate for milk or white.
Held together with a sweet buttery syrup that keeps these bars held together. They do not crumble or fall apart and are beautifully soft and sweet.
The sweet hit of dark chocolate and the chewy cranberries are the star of this recipe and bring highlight to the wonders of what a well stocked pantry can offer.

Ingredients in this recipe
-Old fashioned rolled oats- a pantry staple and very versatile to have on hand
-Unsalted butter- a good quality butter helps to bind the oats creating a soft chewy bar
-Runny honey- a gooey tasty sweetener which helps to bind the oats
-Soft light brown sugar- a healthier alternative to white sugar offering a caramelised flavour
-Vanilla extract- a tasty extract to enhance the flavour
-Sea salt- Funny how salt can enhance a sweeter flavour in things
-Dried cranberries- I use pineapple juice coated cranberries to give a chewy sweet bite
-Ground Flax Seed- Full of nutrients and health benefits. I like to use ground flax so you don't even know it's there!
-Dark chocolate chips- I prefer the deep flavour of dark chocolate to counter the sweetness of the cranberries and sweeteners.

Ingredients
240g old fashioned rolled oats
60g unsalted butter
100g runny honey
50g light brown sugar
1/2 tsp vanilla extract
pinch sea salt
60g dried cranberries, coarsely chopped
20g ground flax seed
60g dark chocolate chips
Method
Preheat the oven to 170°C (340°F).
Bake the oats: Spread the oats evenly onto a baking tray. Bake for 10-12 minutes, stirring halfway through for even browning.
Prepare the wet mixture: In a large saucepan, add the butter, honey, light brown sugar, vanilla, and sea salt. Warm gently over medium heat, stirring occasionally, until the butter is melted and the sugar is dissolved (about 3-5 minutes).
Combine: Pour the baked oats into the saucepan and stir until the oats are evenly coated in the butter mixture.
Add mix-ins: Stir in the dried cranberries and ground flaxseed until well combined.
Prepare the pan: Line an 8"x 8" baking tin with baking parchment.
Press and top: Pour the oat mixture into the prepared tin and press down firmly with the back of a spoon or spatula. Sprinkle the dark chocolate chips over the top and gently press them into the mixture so they stick.
Chill: Place the tin in the fridge and chill for at least 1 hour before cutting into bars and serving.
